    Prepare the Pork

    Season the pork loin pieces with salt and black pepper on both sides.

    Set Up Breading Station

    In three separate shallow bowls, place the flour, beaten eggs, and panko breadcrumbs.

    Bread the Pork

    Dredge each piece of pork in flour, then dip into the beaten eggs, and finally coat with panko breadcrumbs. Press the breadcrumbs onto the meat to adhere well.

    Heat the Oil

    In a large skillet, heat vegetable oil over medium-high heat until shimmering.

    Fry the Pork

    Carefully add the breaded pork to the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Ensure the internal temperature reaches 145°F (63°C).

    Drain and Serve

    Remove the fried pork from the skillet and drain on paper towels. Slice the tonkatsu into strips and serve with katsu sauce.
