    Prepare the Vegetables

    Wash and cut the assorted vegetables into bite-sized pieces. Pat them dry with a paper towel to remove excess moisture.

    Make the Tempura Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the ice water while stirring lightly until just combined. Be careful not to overmix; the batter should be lumpy.

    Heat the Oil

    In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Vegetables

    Dip each piece of vegetable into the tempura batter, allowing the excess to drip off. Carefully place the battered vegetables into the hot oil, frying in batches to avoid overcrowding. Fry until golden and crispy, about 2-3 minutes per side.

    Drain and Serve

    Use a slotted spoon to remove the fried vegetables and drain them on paper towels. Serve hot with soy sauce and optional grated daikon radish for dipping.
