    Prepare Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Stir this mixture into the rice while it's still warm. Allow it to cool to room temperature.

    Prepare California Roll Filling

    Slice the avocado and cucumber into thin strips. Shred imitation crab meat into smaller pieces.

    Assemble California Rolls

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori, shiny side down, on the mat. Wet your hands to prevent sticking and grab a handful of sushi rice. Spread it evenly over the nori, leaving about an inch at the top. Place a few strips of avocado, cucumber, and crab in the center. Roll the mat away from you while pressing gently to form a tight roll. Seal the edge with a bit of water. Slice into bite-sized pieces.

    Make Egg Rolls

    Beat the eggs in a bowl and season with salt and pepper. Heat sesame oil in a non-stick pan over medium heat. Pour in the egg mixture, swirling to coat the pan. Cook until set and slightly golden, then flip and cook the other side. Remove and slice into strips.

    Serve

    Serve the California rolls with steamed white rice on the side. Garnish with wasabi and pickled ginger. Enjoy with soy sauce for dipping.
