Prepare the Chicken
Season the chicken breast fillets with salt and black pepper on both sides.

Set Up Breading Station
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Chicken
Dredge each chicken fillet in flour, shaking off the excess. Dip into the beaten eggs, then coat with panko breadcrumbs, pressing gently to adhere.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken fillets. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.

Drain and Serve
Remove the chicken from the skillet and drain on paper towels. Slice and serve with katsu sauce on the side.
