    Prepare the Sauce

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery and sauté until softened, about 5 minutes.

    Cook the Meat

    Add the ground beef and ground pork to the skillet. Cook until browned, breaking it apart with a spatula, about 8-10 minutes.

    Add Flavors

    Stir in the tomato paste, crushed tomatoes, red wine, oregano, salt, and pepper. Bring to a simmer, then reduce heat and let it cook for 30 minutes, stirring occasionally.

    Cook the Pasta

    While the sauce is simmering, bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside.

    Combine Pasta and Sauce

    Add the cooked rigatoni to the sauce, tossing to combine. Cook for an additional 2-3 minutes to heat through.

    Prepare Herbed Ricotta

    In a bowl, mix the ricotta cheese with chopped basil, parsley, lemon zest, and salt to taste. Stir until well combined.

    Plate the rigatoni Bolognese, top with herbed ricotta and grated Parmesan cheese. Serve hot.
