Crostini Preparation

Prepare the Compote

In a small saucepan over medium heat, combine the chopped red onion, golden raisins, sugar, and apple cider vinegar. Cook until the mixture is soft and the onions are translucent, about 5-7 minutes. Remove from heat and let cool.

Slice the Baguette

Preheat the oven to 400°F (200°C). Slice the French baguette into 1/2 inch thick slices.

Toast the Baguette

Arrange the baguette slices on a baking sheet. Brush each slice with olive oil and season with salt and black pepper. Toast in the oven for about 8-10 minutes, or until golden brown.

Assemble the Crostini

Once the baguette slices are toasted, remove them from the oven. Spread a generous slice of Triple Cream Brie on each piece. Top with a spoonful of the red onion and golden raisin compote.

Serve the crostini warm as an appetizer or snack.
