    Prepare the Pork Belly

    Preheat your oven to 160°C (320°F). Score the skin of the pork belly in a crisscross pattern, season generously with salt and black pepper, and place it in a roasting pan. Roast for 2 hours until tender.

    Make the Glaze

    In a small saucepan, combine the sweet soy sauce and tamarind paste. Heat over low heat until well combined and slightly thickened. Set aside.

    Fry the Green Beans

    In a large frying pan, heat the vegetable oil over medium-high heat. Add the green beans and stir-fry for about 5-7 minutes until they are blistered and tender. Add chili flakes, salt, and pepper to taste.

    Finish the Pork Belly

    Once the pork belly is done roasting, increase the oven temperature to 220°C (430°F) and roast for an additional 15-20 minutes until the skin is crispy. Remove from oven and let rest for 10 minutes.

    Serve the Dish

    Slice the pork belly and serve it over steamed rice, drizzling the sweet soy and tamarind glaze on top. Add the sautéed green beans on the side and garnish with fresh cilantro.
