Prepare the Ribs

Preheat the grill to medium heat. Mix paprika, brown sugar, garlic powder, onion powder, salt, and black pepper in a bowl to create a dry rub. Rub the mixture all over the ribs.

Cook the Ribs

Place the ribs on the grill and cook for about 2 hours, turning occasionally. During the last 30 minutes, brush BBQ sauce on the ribs.

Catfish Cake

Prepare the Catfish

Cook the catfish fillets in a skillet until flaky. Let cool and then flake into a bowl.

Make the Cakes

Mix the flaked catfish, breadcrumbs, egg, green onion, mayonnaise, Old Bay seasoning, salt, and pepper in a bowl. Form into patties and fry in a skillet until golden brown on both sides.

Red Beans and Rice

Sauté Vegetables

In a pot, sauté onion, bell pepper, and celery until softened. Add garlic and cook for another minute.

Combine Ingredients

Add the canned red beans, cooked rice, chicken broth, and Cajun seasoning. Stir well and simmer for about 15 minutes. Season with salt and pepper.

Collard Greens

Cook Collard Greens

In a large pot, sauté onion and garlic until fragrant. Add the collard greens and ham hock, then pour in chicken broth. Simmer for about 45 minutes until greens are tender. Season with salt and pepper.
