Method
Cajun Catfish
Marinate the Catfish
In a bowl, mix Cajun seasoning, olive oil, lemon juice, salt, and black pepper. Add catfish fillets and marinate for at least 30 minutes.
Cook the Catfish
Heat a skillet over medium heat. Add marinated catfish fillets and cook for 4-5 minutes on each side until golden brown and cooked through.
Loin Back Ribs
Prepare the Ribs
Preheat the oven to 300°F (150°C). Rub the ribs with garlic powder, onion powder, smoked paprika, salt, and black pepper.
Bake the Ribs
Place the ribs on a baking sheet and cover with aluminum foil. Bake for 2.5 to 3 hours until tender. Remove foil, brush with barbecue sauce, and bake for an additional 30 minutes.
Red Beans & Rice
Add Beans and Rice
Add red kidney beans, chicken broth, cajun seasoning, salt, and black pepper. Bring to a boil, then add rice and reduce heat. Simmer for about 20 minutes.
Cornbread
Mix Dry Ingredients
In a bowl, combine cornmeal, flour, baking powder, and salt.
Bake the Cornbread
Pour batter into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes until golden brown.
