Prepare the Beans
Rinse the red beans under cold water and soak them overnight in a large bowl of water.

Combine Ingredients
Add soaked red beans, ham hock, bay leaves, cayenne pepper, thyme, salt, and black pepper to the pot. Pour in 6 cups of water and stir well.

Simmer
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, stirring occasionally, until beans are tender.

Cook the Rice
In a separate pot, cook the white rice according to package instructions.

Serve
Remove the ham hock, shred the meat, and return it to the pot. Adjust seasoning with salt and black pepper. Serve the red beans over the cooked rice with cornbread on the side.
