Prepare the Chicken
Preheat your grill to medium-high heat. Pound the chicken breasts to an even thickness for uniform cooking. Season both sides with Cajun seasoning, salt, and black pepper.

Grill the Chicken
Drizzle olive oil on the grill grates. Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C).

Add Goat Cheese
In the last few minutes of cooking, place crumbled goat cheese on top of each chicken breast, cover the grill, and let it melt slightly.

Combine and Serve
Once the chicken is cooked, remove from the grill. Top each piece with crispy bacon, and sprinkle with fresh parsley. Serve immediately.
