Make the Pie Crust
In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

In another bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, apple pie spice, lemon juice, and vanilla extract. Toss to coat the apples evenly.

Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one disc of dough on a floured surface into a circle to fit your pie pan. Place the dough in the pan and fill with the apple mixture. Roll out the second disc of dough and place over the filling. Seal and flute the edges. Cut slits in the top crust to allow steam to escape. Brush the top with the beaten egg.
