Prepare the Oysters

Shuck the oysters and place them in a bowl. In another bowl, whisk together the eggs and milk.

Coat the Oysters

In a shallow dish, mix the flour, cornmeal, salt, black pepper, and cayenne pepper. Dip each oyster in the egg mixture, then dredge in the flour mixture until well-coated.

Fry the Oysters

Heat the oil in a deep pan over medium-high heat. Once hot, carefully add the oysters in batches, frying until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Po Boys

Slice the ciabatta bread in half and toast lightly if desired. Spread a generous amount of remoulade sauce on both halves of the bread. Layer with fried oysters and top with fresh romaine lettuce.

Serve

Close the sandwich and cut in half. Serve immediately with extra remoulade on the side.
