Cook the Base

In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, and red bell pepper. Sauté until the onion is translucent, about 5 minutes.

Add Liquids and Seasonings

Stir in the diced tomatoes, fish stock (or clam juice), white wine, bay leaves, red pepper flakes, salt, and black pepper. Bring to a simmer.

Add Seafood

Once simmering, add the cod, shrimp, and clams. Cover and cook until the clams open and the shrimp turn pink, about 5-7 minutes.

Prepare Asparagus and Ciabatta

While the stew is cooking, grill asparagus until tender and charred. Toast or grill ciabatta bread until golden brown.

Serve

Remove bay leaves, ladle the cioppino into bowls, and serve with grilled asparagus and garlic ciabatta on the side.
