Preparation Steps
- 1
Cook Jasmine Rice
In a medium pot, combine 1 cup of jasmine rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is fluffy. Remove from heat and let it sit covered for another 5 minutes.
- 2
Prepare the Black Beans
If using canned black beans, rinse and drain them. If using dried beans, soak them overnight and then cook until tender, about 1-2 hours.
- 3
Prep the Vegetables
Finely shred the cabbage, dice the red onion, and slice the jalapeños (remove seeds for less heat).
- 4
Assemble the Burritos
On each flour tortilla, layer 1/4 cup of jasmine rice, 1/4 cup of black beans, 1/4 cup of shredded cabbage, 2 tablespoons of diced red onion, 1 sliced jalapeño, and 2 tablespoons of white sauce.
- 5
Wrap the Burritos
Fold the sides of the tortilla inwards and then roll from the bottom up to enclose the filling tightly.
- 6
Serve
Serve the burritos warm with extra white sauce on the side for dipping if desired.
