Prepare the ingredients
Start by washing and slicing the zucchini, tomatoes, and red onion. If your roasted red peppers are not pre-prepared, roast them in the oven until charred, then peel and slice.

Toast the walnuts
In a dry skillet over medium heat, toast the walnuts for about 5 minutes or until fragrant. Stir frequently to prevent burning. Remove from heat and let cool.

Assemble the salad
In a large bowl, combine the arugula, sliced zucchini, tomatoes, red onion, roasted red peppers, and crumbled goat cheese. Toss gently.

Add cheese and seasoning
Sprinkle the provolone cheese (sliced or cubed) and toasted walnuts over the salad. Add red pepper flakes according to your spice preference.
