Prepare the Dough
Start by preparing your pizza dough according to your favorite recipe or use a pre-made dough. Roll out the dough on a floured surface to your desired thickness.

Preheat the Oven
Preheat your oven to 475°F (245°C) to ensure a crispy crust.

Prepare the Sausage
If using fresh Berkshire fennel sausage, remove the casing and crumble it into small pieces. In a skillet over medium heat, cook the sausage until browned and fully cooked. Drain any excess fat.

Slice the Vegetables
Thinly slice the red onion and chop the scallions. Set aside.

Assemble the Pizza
Spread the panna evenly over the rolled-out pizza dough. Evenly distribute the cooked sausage on top, followed by the hand-stretched mozzarella, red onions, and scallions.

Bake the Pizza
Transfer the assembled pizza to a pizza stone or baking sheet. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is bubbling.

Remove the pizza from the oven and allow it to cool for a couple of minutes. Slice and serve hot, garnished with additional scallions if desired.
