    Prepare the Tenderloin

    Season the beef tenderloin with olive oil, salt, and black pepper. Let it marinate for at least 30 minutes.

    Cook the Tenderloin

    Preheat a skillet over medium-high heat. Sear the beef tenderloin for about 4-5 minutes on each side until it's browned. Reduce heat to medium and cook until desired doneness (about 10-15 minutes for medium rare).

    Prepare the Soft Eggs

    In a small pot, bring water to a gentle simmer. Carefully crack the eggs into the water and poach for about 3-4 minutes until whites are set but yolks remain runny. Remove with a slotted spoon and set aside.

    Assemble the Dish

    Slice the cooked tenderloin and layer it on a plate. Top with Fontinella and hand-stretched mozzarella cheeses, allowing them to melt slightly. Add slices of La Quercia lomo and garnish with fresh rosemary. Finally, place the poached eggs on top.

    Serve immediately with additional salt and pepper if desired.
