Make the Gelato Base
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves.

Cool and Add Flavor
Remove from heat and stir in vanilla extract and salt. Allow the mixture to cool to room temperature, then refrigerate until completely chilled, at least 4 hours or overnight.

Make the Salted Caramel
In a saucepan, combine the granulated sugar and water for the caramel. Heat over medium heat without stirring until the sugar dissolves and turns a deep amber color. Remove from heat and carefully add the sea salt.

Transfer the caramel to a heatproof bowl and let cool to room temperature.

Once the gelato base is chilled, churn it in an ice cream maker according to the manufacturer's instructions. In the last few minutes of churning, slowly drizzle in the salted caramel and chopped dark chocolate.
