    Make the Gelato Base

    In a medium saucepan, combine the whole milk, heavy cream, and sugar over medium heat. Stir until the sugar is dissolved. Remove from heat.

    Temper the Egg Yolks

    In a separate bowl, whisk the egg yolks. Slowly add a small amount of the warm milk mixture to the yolks while whisking continuously to temper them. Gradually whisk in the remaining milk mixture.

    Cook the Mixture

    Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens and coats the back of a spoon (about 8-10 minutes). Do not let it boil.

    Add Salt and Vanilla

    Remove from heat, add the salt and vanilla extract, and stir to combine. Let the mixture cool to room temperature.

    Chill the Mixture

    Cover the mixture and refrigerate for at least 4 hours or overnight until completely chilled.

    Churn the Gelato

    Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the gelato to a container, layering with salted caramel sauce as you go. Swirl with a knife to create a marbled effect.
