    Prepare the Onions

    Slice the onion into thin rings. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and a pinch of salt. Cook, stirring frequently, until caramelized, about 15-20 minutes.

    Grill the Filet Mignon

    Preheat the grill to medium-high heat. Season the filet mignon with salt and black pepper. Grill for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Let rest for a few minutes before slicing.

    Toast the Ciabatta

    Slice the ciabatta loaves in half and brush the cut sides with the remaining olive oil. Place on the grill for about 2-3 minutes until toasted.

    Assemble the Sandwich

    Spread garlic aioli on the bottom half of the toasted ciabatta. Layer with frisee lettuce, sliced filet mignon, caramelized onions, and gruyere cheese. Top with the other half of the ciabatta and press down gently.

    Cut the sandwich in half and serve immediately while warm.
