Prepare the Calamari

In a large bowl, combine the flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and buttermilk. Dip the calamari rings first into the egg mixture, then coat them in the flour mixture.

Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari

Carefully add the coated calamari to the hot oil in batches, frying for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Tomato Sauce

In a saucepan, heat the tomato sauce over medium heat. Add garlic and simmer for 10-15 minutes, stirring occasionally.

Prepare the Lemon Herb Aioli

In a bowl, mix together mayonnaise, lemon juice, lemon zest, dijon mustard, and chopped parsley until well combined.

Serve the crispy calamari hot with rustic tomato sauce and lemon herb aioli on the side.
