    Prepare the Mussels

    Rinse the PEI mussels under cold water, scrubbing the shells to remove any debris. Remove the beards if present.

    Cook the Chorizo

    In a large pot, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned, about 5 minutes.

    Build the Broth

    Add the minced garlic and diced bell peppers to the pot. Sauté for another 3 minutes until the peppers soften. Stir in the diced plum tomatoes, chicken broth, and season with salt and black pepper.

    Add the Mussels

    Bring the broth to a simmer, then add the cleaned mussels and fresh peas. Cover and cook for about 5-7 minutes, or until the mussels have opened.

    Finish with Herbs

    Once the mussels are cooked, stir in the chopped fresh herbs. Remove from heat.

    Serve

    Serve the mussels and broth in bowls, accompanied by grilled rustic bread for dipping.
