Prepare the Pork
Season the Berkshire pork chops with salt and black pepper on both sides. Dredge each chop in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with breadcrumbs.

Cook the Pork
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded pork chops and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove from skillet and place on a paper towel-lined plate to drain.

Prepare the Salad
In a large bowl, combine arugula, chopped Campari tomatoes, and thinly sliced red onion. Drizzle with olive oil and toss to combine. Season with salt and pepper to taste.

Serve
Plate the crispy pork Milanese and serve alongside the arugula salad. Grate Parmigiano-Reggiano cheese over the top of the pork and salad before serving.
