Boil Spaghetti
In a large pot, bring 2 liters of water to a rolling boil. Add a generous amount of salt to the water and then add the spaghetti. Cook according to package instructions until al dente.

Prepare Cheese and Pepper
While the pasta is cooking, in a large mixing bowl, combine the grated Pecorino Romano cheese and freshly cracked black pepper. Mix well to form a paste.

Combine Pasta and Cheese
Once the spaghetti is cooked, reserve about 1 cup of the pasta water and then drain the spaghetti. Immediately add the hot spaghetti to the mixing bowl with the cheese and pepper mixture.

Emulsify Sauce
Toss the spaghetti quickly with the cheese and pepper paste. Gradually add reserved pasta water a little at a time, tossing continuously until the sauce is creamy and coats the spaghetti evenly.

Serve the spaghetti immediately, garnished with additional Pecorino Romano cheese and black pepper if desired.
