1. Prepare the Blue Cheese Butter

In a bowl, mix the softened unsalted butter with crumbled blue cheese, minced garlic, chopped parsley, lemon juice, and black pepper until well combined. Form the mixture into a log shape, wrap in plastic wrap, and refrigerate until firm.

2. Prepare the Ribeye Steak

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Rub the spice mixture generously over both sides of the ribeye steaks.

3. Cooking the Steak

Heat olive oil in a cast-iron skillet over high heat until shimmering. Add the ribeye steaks and cook for about 4-5 minutes on each side for medium-rare, or longer depending on your desired doneness.

4. Serving

Remove the steaks from the skillet and let them rest for a few minutes. Top each steak with a slice of the blue cheese butter before serving.
