1. Prepare the Bananas
Peel the ripe bananas and cut them in half lengthwise.
2. Assemble the Turon
Place a spring roll wrapper on a clean surface with a corner pointing towards you. Spread about 2 tablespoons of ube jam in the center of the wrapper. Place half a banana on top of the ube jam. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Repeat with remaining wrappers and filling.
3. Deep Fry the Turon
In a deep frying pan or pot, heat vegetable oil over medium heat. Once the oil is hot, carefully add the wrapped turon in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
4. Prepare the Caramel Sauce
In a small saucepan, combine 1 cup of sugar and 1/4 cup of water over medium heat. Stir until the sugar dissolves, then let it boil without stirring until it turns golden brown. Remove from heat and carefully add 1/2 cup of heavy cream, stirring to combine. Let it cool slightly before serving.
5. Serve
Serve the hot ube banana turon drizzled with caramel sauce.
