Chicken Adobo

Jasmine Rice

Method

Cooking Chicken Adobo

    Prepare the Marinade

    In a bowl, mix soy sauce, vinegar, minced garlic, bay leaves, black peppercorns, and water. Add chicken thighs and marinate for at least 30 minutes.

    Cook the Chicken

    In a large pot, heat oil over medium heat. Sauté sliced onion until translucent. Add the marinated chicken (reserve marinade) and brown on all sides.

    Add Marinade and Simmer

    Pour in the reserved marinade and simmer for 30-40 minutes until chicken is tender and sauce is thickened. Adjust seasoning as needed.

Cooking Jasmine Rice

    Rinse and Cook Rice

    Rinse jasmine rice under cold water until water runs clear. In a pot, combine rinsed rice and water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

Preparing Pancit

    Cook Noodles

    Soak rice noodles in warm water for 20 minutes until softened. Drain and set aside.

    Stir-fry Vegetables

    In a skillet, heat oil over medium-high heat. Add carrots, cabbage, and green onions, stir-frying for 3-5 minutes.

    Combine and Serve

    Add softened noodles and soy sauce to the skillet. Toss everything together and cook for another 2-3 minutes.

Frying Lumpia

    Prepare Filling

    In a bowl, mix ground pork, grated carrots, chopped green onions, minced garlic, salt, and pepper.

    Wrap Lumpia

    Place a spoonful of filling onto a lumpia wrapper, roll tightly, and seal the edges.

    Fry Lumpia

    In a deep pan, heat oil over medium heat. Fry lumpia until golden brown and crispy, about 3-4 minutes per side.
