Prepare the Pork
In a large pot, combine pork belly, salt, pepper, garlic, bay leaves, and water. Bring to a boil over medium heat.
Boil the Pork
Once boiling, reduce heat to low and simmer for about 1 hour, or until the pork is tender. Add more water if needed to keep the pork submerged.
Cool the Pork
Remove the pork belly from the pot and let it cool completely. Pat it dry with paper towels.
Fry the Pork
In a deep frying pan, heat the oil over medium-high heat. Once the oil is hot, carefully add the pork belly and fry until golden brown and crispy, about 10-15 minutes.
Drain and Serve
Remove the pork from the oil and drain on paper towels. Cut into pieces and serve hot with spiced vinegar.
