Preparation Steps

In a large bowl, cream together the unsalted butter and powdered sugar until light and fluffy. Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients

In a separate bowl, sift together the all-purpose flour, cornstarch, baking powder, and salt.

Mix Together

Gradually add the dry ingredients to the butter mixture, mixing until a smooth dough forms.

Chill the Dough

Wrap the dough in plastic wrap and refrigerate for about 1 hour, or until firm.

Preheat the Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Shape the Cookies

On a floured surface, roll out the dough to about 1/8 inch thickness. Cut out circles using a cookie cutter or glass. Place the cutouts on the prepared baking sheet.

Bake the Cookies

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow to cool completely on a wire rack.

Assemble the Alfajores

Spread a generous amount of dulce de leche on the bottom of one cookie and top with another cookie to create a sandwich.

Roll the assembled alfajores in additional powdered sugar until well coated.
