Preparation
Prepare the Salsa Criolla
In a bowl, combine the sliced red onion, diced tomato, chopped cilantro, lime juice, salt, and black pepper. Mix well and set aside to let the flavors meld.
Prepare the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, salt, and black pepper. Gradually add cold water while whisking until you achieve a smooth batter.
Fry the Seafood
Heat oil in a deep pan over medium-high heat. Dip the shrimp, mussels, clams, squid, and crab in the batter and carefully place them in the hot oil. Fry until golden and crispy, about 3-4 minutes. Remove and drain on paper towels.
Cook the Fish
In the same pan, lightly season the fish fillets with salt and pepper. Fry them for about 4-5 minutes on each side or until cooked through. Remove and set aside.
Fry the Yuca
In a separate pot, boil the yuca pieces until tender, about 10-12 minutes. Drain and fry in hot oil until golden and crispy. Remove and drain on paper towels.
Serve
On a plate, place the fried fish fillet, top with the crispy seafood, and serve with fried yuca on the side. Garnish with salsa criolla.
