Method

Base Preparation

1

Make the Dough

In a large mixing bowl, combine 2 cups of all-purpose flour and 1 tsp of salt. Gradually add 3 cups of water, mixing until the dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

2

Cook the Filling

In a large skillet, heat 2 tbs of olive oil over medium heat. Add 1 medium finely chopped onion and 3 minced garlic cloves, sautéing until the onion is translucent. Add 1 lb of ground beef, breaking it apart with a spatula, and cook until browned. Stir in 1 chopped bell pepper, 1 tsp of cumin, 1 tsp of chili powder, 1 tsp of salt, and 1 tsp of black pepper. Cook until the bell pepper is tender, about 5-7 minutes. Finally, mix in 1 cup of chopped cilantro. Remove from heat and let cool slightly.

Assembling the LALO

3

Form the LALO

Divide the rested dough into equal portions. Roll each portion into a thin circle. Place a generous amount of the beef filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Optionally, crimp the edges with a fork for extra security.

Cooking the LALO

4

Cook the LALO

In the same skillet, add a bit more olive oil if necessary and heat over medium-high heat. Cook each LALO for about 3-4 minutes on each side or until golden brown and crispy.

Serving

5

Serve Hot

Serve the LALO hot, garnished with sour cream, sliced avocado, and lime wedges on the side.
