Prepare the Ingredients

Start by preparing all your ingredients. Chop the onion, mince the garlic, slice the bell peppers, and dice the tomatoes. Set aside.

Cook the Chorizo

In a large skillet or pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced chorizo and cook until it is browned and crispy, about 5-7 minutes. Remove the chorizo from the pan and set aside.

Sear the Chicken

In the same pan, add the remaining tablespoon of olive oil. Season the chicken thighs with salt, black pepper, paprika, and cumin. Sear the chicken in the hot oil for 5-6 minutes on each side, until golden brown. Remove the chicken and set aside.

Sauté the Vegetables

In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes. Then add the sliced bell peppers and cook for another 3 minutes.

Return the browned chicken and cooked chorizo to the skillet. Add the diced tomatoes and chicken broth. Stir to combine all the ingredients, bringing the mixture to a gentle simmer.

Cover the skillet and let it simmer for about 25-30 minutes, or until the chicken is cooked through. Check for seasoning and adjust salt and pepper to taste. Garnish with fresh cilantro before serving.
