Method

Preparing the Salmon

  1. 1

    Season the Salmon

Pat the salmon fillets dry with paper towels. Drizzle olive oil over the fillets and season with salt, black pepper, and lemon juice on both sides.

  2. 2

    Cook the Salmon

Heat a non-stick skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes. Flip the fillets and cook for an additional 4-5 minutes, or until the salmon flakes easily with a fork. Remove from skillet and set aside.

Making the Vegetable Hash

  1. 3

    Prepare the Vegetables

Dice the zucchini, bell pepper, and red onion into small pieces. Mince the garlic cloves.

  2. 4

    Sauté the Vegetables

In the same skillet used for the salmon, add a bit more olive oil if necessary. Add the diced zucchini, bell pepper, red onion, and minced garlic. Sauté over medium heat for 5-7 minutes until the vegetables are tender.

  3. 5

    Add Corn and Season

Stir in the corn kernels and season the mixture with salt, black pepper, and chopped fresh parsley. Cook for an additional 2-3 minutes until heated through.

Serving

  1. 6

    Plate the Dish

On a large plate, create a bed of the vegetable hash and place a cooked salmon fillet on top. Garnish with additional parsley if desired.

  2. 7

    Enjoy

Serve immediately while warm and enjoy your delightful Salmon with Summer Veg Hash!
