Pasta Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add 8 cups of elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Cheese Sauce Preparation

    Make the Roux

    In a medium saucepan over medium heat, melt 4 tablespoons of unsalted butter. Once melted, whisk in 1 cup of all-purpose flour and cook for 2-3 minutes until lightly golden.

    Add Milk and Miso

    Gradually add 3 cups of milk to the roux, whisking continuously to prevent lumps. Stir in 1 cup of miso paste until well combined.

    Mix in the Cheeses

    Continue to cook the sauce over medium heat, stirring frequently until it thickens, about 5-7 minutes. Remove from heat and stir in 2 cups of shredded sharp cheddar cheese and 1 cup of shredded mozzarella cheese until melted and smooth. Season with 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder.

Combine and Bake

    Combine Pasta and Sauce

    In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Mix until all the pasta is evenly coated.

    Prepare for Baking

    Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased baking dish.

    Add Toppings

    In a small bowl, mix together 1 cup of panko breadcrumbs and 1 cup of grated Parmesan cheese. Sprinkle this mixture evenly over the macaroni and cheese. Optional: drizzle with a little melted butter for extra crispiness.

    Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbly.
