Method

Preparation

  1. 1

    Prepare the Pork Chops

Remove bone-in pork chops from the refrigerator and let them sit at room temperature for about 30 minutes.

  2. 2

    Season the Pork Chops

In a small bowl, mix together salt, black pepper, chopped garlic (minced), and chopped fresh rosemary. Rub this mixture generously over both sides of the pork chops.

Cooking

  1. 3

    Heat the Oil

In a large skillet, heat the olive oil over medium-high heat until shimmering.

  2. 4

    Sear the Pork Chops

Add the seasoned pork chops to the skillet. Sear them for about 4-5 minutes on each side until golden brown. Use tongs to flip them carefully.

  3. 5

    Check for Doneness

Use a meat thermometer to check the internal temperature of the pork chops. They should reach at least 145°F (63°C). If they are not done, cook for an additional 2-3 minutes per side.

Serving

  1. 6

    Rest and Serve

Remove the pork chops from the skillet and let them rest for 5 minutes. Serve with lemon wedges and drizzle with honey if desired.
