Cooking the Pasta

    Boil the Bucatini

    In a large pot, bring salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Once cooked, reserve 1 cup of the pasta water, then drain the pasta and set aside.

Sautéing the Vegetables

    Prepare the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the diced red bell pepper and sauté for 3-4 minutes until slightly softened.

    Add Zucchini and Mushrooms

    Add the diced zucchini and sliced mushrooms to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the mushrooms are browned and the zucchini is tender.

    Incorporate Spinach and Garlic

    Mince the garlic and add it along with the spinach to the skillet. Cook for 2-3 minutes until the spinach is wilted and the garlic is fragrant.

    Add Cherry Tomatoes

    Halve the cherry tomatoes and add them to the skillet. Cook for another 2 minutes until they are slightly softened.

Combining Everything

    Add the cooked bucatini to the vegetable mixture in the skillet. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is reached.

    Sprinkle the parmesan cheese, red pepper flakes, black pepper, and basil over the pasta. Toss well to combine and serve immediately, garnished with additional parmesan if desired.
