    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb chunks and sear until browned on all sides. Remove the lamb and set aside.

    In the same pot, add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Adding Spices

    Stir in the ground cinnamon, cumin, coriander, ginger, salt, and black pepper. Cook for another minute to toast the spices.

    Simmering the Lamb

    Return the seared lamb to the pot. Pour in the honey and water or broth. Stir to combine, then bring to a simmer.

    Slow Cooking

    Cover the pot and reduce the heat to low. Let the lamb simmer for about 1.5 to 2 hours, or until the meat is tender and the sauce is thickened.
