    Prepare the Beef

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the cubed beef and cook until browned on all sides.

    Add Carrots and Spices

    Stir in the sliced carrots, cinnamon stick, salt, and black pepper. Cook for 5 minutes until the carrots start to soften.

    Simmer

    Add 4 cups of water to the pot. Bring to a boil, then reduce heat, cover, and simmer for 1 hour or until the beef is tender.

    Cook the Tfaya

    In a separate pan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they are golden brown. Stir in the sugar and cook for an additional 5 minutes until caramelized.

    Prepare the Couscous

    Once the beef is tender, remove the beef and carrots from the pot. Add the rinsed chickpeas and bring the liquid back to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.

    Serve

    Fluff the couscous with a fork. Serve it on a plate topped with the beef, carrots, and drizzle with the glazed onions from the tfaya.
