Moroccan chicken simmered in a delicious sauce and cooked with saffron, preserved lemons, olives and topped with fries. Comes with your choice of pita or rice.

Sauté the Aromatics
In the same pot, add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic, ground cumin, ground ginger, and ground cinnamon, and cook for another minute until fragrant.

Simmer the Tagine
Return the chicken to the pot. Add saffron, chicken broth, preserved lemons, olives, salt, and black pepper. Bring to a simmer, cover, and reduce the heat to low. Cook for about 40 minutes or until the chicken is tender.

Prepare the Fries
While the chicken is cooking, fry the potato strips in hot oil until golden and crispy. Drain on paper towels and season with salt.

Serve
Once the chicken is cooked, garnish with chopped cilantro. Serve the tagine with fries on top, alongside your choice of pita or rice.
