Cooking and Assembling the Sandwich

    Prepare the Brisket

    Heat olive oil in a large pot over medium heat. Add the sliced onion and sauté until caramelized, about 10-15 minutes. Stir in minced garlic, cumin, coriander, paprika, cinnamon, black pepper, and salt. Cook for another 2 minutes until fragrant.

    Cook the Brisket

    Add the brisket to the pot, coating it with the spice mixture. Cover and cook on low heat for 3-4 hours or until the brisket is tender and easily shredded. Alternatively, you can cook it in a slow cooker on low for the same time.

    Shred the Brisket

    Once the brisket is cooked, remove it from the pot and let it rest for a few minutes. Shred the brisket using two forks and mix it back into the juices in the pot.

    Prepare the Aioli

    In a small bowl, combine 1/2 cup of mayonnaise with 1 tablespoon of the caramelized onions from the pot and a pinch of salt. Mix well to create the glazed onion aioli.

    Assemble the Sandwich

    Spread the aioli on one side of each slice of bread. Layer the shredded brisket, arugula, and pickles on top. Close the sandwich with another slice of bread and press gently.

    Serve

    Slice the sandwich in half and serve immediately with extra pickles on the side.
