    Prep the Ingredients

    Begin by chopping the onion, carrots, celery, and potatoes into bite-sized pieces. Mince the garlic and set all vegetables aside.

    Season the Beef

    Rub the beef chuck roast with salt, black pepper, dried thyme, and dried rosemary. Ensure the beef is evenly coated.

Cooking

    Sear the Beef

    In a large skillet or Dutch oven, heat a tablespoon of oil over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. Remove the beef and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onions and garlic. Sauté until the onions are translucent, about 5 minutes. Add the carrots and celery, and cook for an additional 3 minutes.

    Return the beef to the skillet with the sautéed vegetables. Add the diced potatoes, beef broth, and bay leaves. Stir to combine.
