Pudding Preparation

    Soak Tapioca Pearls

    In a bowl, soak the tapioca pearls in warm water for about 30 minutes or until they become translucent.

    Cook Tapioca Pearls

    In a pot, bring 4 cups of water to a boil. Add the soaked tapioca pearls and cook for about 15-20 minutes, stirring occasionally until they turn transparent and chewy.

    Make Coconut Milk Mixture

    In a separate saucepan, combine 2 cups of coconut milk, 1 cup of sugar, and 1 tsp of salt. Heat over low heat until the sugar dissolves, stirring occasionally. Do not boil.

    Combine Mixtures

    Once the tapioca pearls are cooked, drain them and rinse under cold water. Add the cooked tapioca pearls to the coconut milk mixture and stir well. Remove from heat and let cool.

Assembling and Serving

    Dice the mango into small cubes and set aside. Chop the mint leaves and set them aside as well.
