Prepare the Ingredients

Start by peeling and deveining the shrimp if they are not already prepared. Chop the bell peppers and zucchini into bite-sized pieces, and dice the onion. Mince the garlic cloves.

Sauté Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Then, add the minced garlic and sauté for an additional 1 minute.

Add Bell Peppers and Zucchini

Add the bell peppers and zucchini to the skillet. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.

Cook the Shrimp

Increase the heat to medium-high and add the shrimp to the skillet. Pour in the soy sauce, lemon juice, black pepper, and red pepper flakes. Cook for about 3-4 minutes, stirring frequently, until the shrimp turn pink and opaque.

Serving

Garnish and Serve

Remove the skillet from heat. Sprinkle fresh parsley over the sautéed shrimp and vegetables. Serve hot, either on its own or with a side of rice or noodles.
