Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 10 minutes.

Finely chop the shallots, green onions, cilantro, and mint leaves. Set aside in a bowl.

In a large skillet over medium heat, cook the ground chicken until fully browned and cooked through, about 5-7 minutes, breaking it up with a spatula as it cooks.

Once the chicken is cooked, stir in the shallots, fish sauce, lime juice, chili flakes, and half of the chopped cilantro and mint. Cook for an additional 2-3 minutes until the shallots are slightly softened.

Spoon the spicy larb gai mixture into the center of the lettuce leaves. Top with remaining cilantro and mint, and garnish with chopped green onions.
