Method
Preparation
- 1
Prepare the Chicken Wings
In a large mixing bowl, season the chicken wings with salt and black pepper. Set aside.
- 2
Make the Marinade
In a separate bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, Thai red chili paste, and lime juice. Whisk until the sugar dissolves.
- 3
Marinate the Wings
Pour the marinade over the seasoned chicken wings and toss to coat well. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
Cooking
- 4
Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
- 5
Arrange the Wings
Remove the chicken wings from the marinade, allowing any excess to drip off, and arrange them in a single layer on the wire rack.
- 6
Bake the Wings
Bake the wings in the preheated oven for about 40-45 minutes, flipping halfway through, until they are golden brown and crispy.
Serving
- 7
Garnish and Serve
Remove the wings from the oven and let them cool slightly. Garnish with chopped green onions and serve with lime wedges on the side.
