    Cook the Rice

    Rinse 2 cups of jasmine rice under cold water until the water runs clear. Cook the rice according to the package instructions. Allow it to cool completely, ideally in the refrigerator for a few hours or overnight for best results.

    Prepare the Vegetables

    While the rice is cooling, dice 1 cup of carrots, chop 1 cup of green onions, and measure out 1 cup of green peas. Mince 3 tsp of garlic.

    Scramble the Eggs

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack 2 large eggs into the skillet and scramble them until fully cooked. Remove the eggs from the skillet and set aside.

    Stir-fry the Vegetables

    In the same skillet, add 2 tablespoons of vegetable oil. Once hot, add the minced garlic and stir-fry for about 30 seconds until fragrant. Add the diced carrots and green peas and stir-fry for 2-3 minutes until tender.

    Add the cooled rice to the skillet, breaking up any clumps. Pour in 4 tablespoons of soy sauce and 1 tablespoon of fish sauce. Stir-fry the mixture for about 5 minutes until everything is well combined and heated through.

    Add Eggs and Garnish

    Return the scrambled eggs to the skillet and add chopped green onions and cilantro. Mix well to combine. If desired, add Sriracha sauce to taste for a spicy kick.

    Serve the Thai fried rice hot on plates or in bowls. Garnish with lime wedges on the side for squeezing over the rice.
