Marinate the Chicken

In a bowl, combine coconut milk, soy sauce, brown sugar, ground coriander, ground cumin, minced garlic, minced ginger, lime juice, salt, and black pepper. Mix well.

Add the chicken strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
Prepare the Peanut Sauce

Combine Ingredients
In a saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and chili paste.

Cook over medium heat, stirring constantly until the mixture is smooth and heated through. If the sauce is too thick, add water to achieve desired consistency.

Let the sauce simmer for a few minutes, then remove from heat and set aside.
Grill the Chicken Skewers
