    Roasting the Garlic

    Preheat your oven to 400°F (200°C). Place the whole garlic cloves on a sheet of aluminum foil, drizzle with 1 tablespoon of vegetable oil, and wrap tightly. Roast in the oven for about 30 minutes, or until the cloves are soft and caramelized. Once done, allow to cool slightly, then squeeze the garlic out of the skins and mash into a paste.

    Preparing the Rice

    If using leftover rice, make sure it's cold and clump-free. If cooking fresh rice, rinse jasmine rice under cold water until the water runs clear, then cook according to package instructions. Allow to cool.

    Frying the Rice

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the mashed roasted garlic and stir-fry for about 1 minute until fragrant.

    Adding Rice

    Add the cooked jasmine rice to the skillet. Use a spatula to break up any clumps. Stir-fry for about 5 minutes, allowing the rice to get slightly crispy.

    Seasoning

    Pour in the soy sauce and mix well, ensuring each grain of rice is coated. If using, add frozen peas and carrots now and stir-fry for an additional 2-3 minutes until heated through.

    Finishing Touches

    If using, create a well in the center of the rice and pour in the beaten eggs. Scramble until fully cooked, then mix into the rice. Drizzle with sesame oil if desired. Stir in chopped green onions just before serving.
