Wash and slice the bell pepper, carrot, zucchini, and broccoli florets into bite-sized pieces.

If using chicken, slice it into thin strips. If using tofu, cut it into cubes and pat dry.

In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken or tofu and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the red curry paste. Stir for about 1 minute until fragrant. Pour in the coconut milk and vegetable broth, and add brown sugar. Stir well to combine.

Add the prepared vegetables to the curry sauce. Bring to a simmer and cook for 10-15 minutes until the vegetables are tender.
